Lovin' Life 7/9/2017: Pancake Mix.

Breakfasts at our place are pretty monotonous.  Even on the weekends when I've got a bit more time on my hands.  The most exciting we get is a walk to our local cafe strip where I order my usual coffee and a pastry while Preschooler SSG gets bacon and a fried egg with toast plus a babycino.  It's our standing order and even though Preschooler SSG's hot breakfast isn't a standard menu item, they know us well enough to get it made without any hassle.


It's been ages but I finally reacquainted myself with pancake mix over the weekend.  White Wings make a standard and buttermilk version and these bottled mixes cost around $3.  All you need to do is add water to the fill line and shake.  It does help to loosen the dry mix before adding the water and also to invert the solution for a bit to get things going before you shake.

The batter ends up being pretty thick which makes it easy to control the shape of your pancakes.  I cooked mine for the recommended 2 minutes per side on a medium to low flame.  Unused wet mix keeps in the fridge for up to 3 days which is handy for the weekend because it meant we had a 'special' breakfast at home for both days.


I was pleasantly surprised at how good this pancake mix tasted.  The pancakes were dense and fluffy but not super sweet like ready made pancakes can be.


I'm still working on making my pancakes uniformly circular but I have discovered that they taste pretty good with a few frozen blueberries added just as you drop the batter into the pan.

I'm doing a stock up of these the next time I'm at the supermarket.

  1. I've never been a pancake girl - but have often wished that I was. I like eggs for brekky on weekend mornings. There's something about it that makes it a bit more of an effort than during the week. #TeamLovinLife

  4. I'm coeliac so have to buy gluten-free pancake mixes and haven't had a lot of luck. I have a basic pikelet recipe though that seems okay with GF flour and I just add more or less milk depending on whether I want fat splodgy pikelets vs larger pancakes.

    Interestingly I hadn't had pikelets for ages but my mum made them recently when I stopped in for lunch.

    PS. I keep getting red lines telling me I'm spelling pikelets incorrectly but I can't be bothered googling it! ;-) #teamlovinlife

  6. We get versions of this here. I think Betty Crocker. A good idea if you've got a youngster. We used them on pancake day.

  8. I haven't used pancake mix for YEARS! We make our own now (usually banana pancakes). But I used to use the White Wings eons ago. An oldie but a goodie.
